Coray Kitchen – located in Albany County at 360 Delaware Avenue in Delmar – opened in late November 2023 under the direction of life and business partners Javier Villatoro and Casey Carroll.
Originally from Honduras, Villatoro spent 15 years helming kitchens in San Francisco, while Carroll brings her front-of-house and food marketing experience.
“Coray Kitchen tells the story of how migration shapes who we are, and influences the flavors we find on the plate,” reads its website.
The menu boasts a mix of Spanish and Italian-inspired dishes, like the Spanish Seafood Paella – made with Spanish rice, scallops, shrimp, clams, mussels, house made andouille sausage, peas, and bell peppers.
Diners can also choose from several small plates, like the Pulpo a la Brasa – grilled octopus, potato and truffle purée, fried leeks, and romesco – or Colossal Cajun Shrimp, served with amber ale cajun cream sauce and a baguette.
There’s also a raw bar, featuring three to four varieties of fresh oysters, along with craft cocktails, beer, and wine.
“Everything is made from scratch, embracing slow time, developed flavors, and a sense of home,” said its website.
In the two short months since opening, the restaurant has received overwhelmingly positive reviews online.
“Great experience. Delicious food. Lovely ambience. Friendly servers,” Shannon B., of Troy, wrote on Yelp. “Yay for this amazing gem in Delmar!”
Another reviewer was equally impressed with the “friendly service, good food, and pleasant ambiance.”
“A great addition to the Delmar dining scene,” Carol C., of Slingerlands, said on Yelp. “Looking forward to my next visit.”
